From Private Soldier to senior Commissioned Officer rank via a successful career in the

Catering Services and Facilities Management of the British Army.

Integrity, intelligence and flexibility with an eye for detail are complimented by down to

earth common sense.  A manager with a broad portfolio of transferable skills and a firm

yet friendly style, who has been rewarded with positions of responsibility and trust.

 

Currently lecturing on Food and Beverage Management at the Eastern Mediterranean

Career:

1995-05          UNIVERSITY LECTURE

 

Lecturing on Food and Beverage Management, compiling course syllabus and course

outlines, setting and marking exams, for approximately 130 students taking the

following courses:

A Four-Year Bachelor of Science (B.S.) Program in Tourism and Hospitality

Management

A Two-Year Associate Degree Program in Tourism and Hospitality

Management

 

1993-95          AREA MANAGER

 

Managed all aspects of provision, accounting and the feeding of 1500, 3 meals per day,

in 6 locations plus a 400-bed hospital.  Supervised and controlled £3.25m per annum

contracts.  Administration and progressive training of 110 staff.  Facilities management.

 

1992-93          AREA MANAGER

 

Controlled all aspects of provision from central bulk store and for feeding in 39

locations.  Supervised and controlled £3m per annum contracts.

Administration and progressive training of 150 staff.  Facilities Management

 

1990-92          REGIONAL MANAGER

 

Accountable to the Chief Executive for the catering standards throughout the South

West of England, in 120 feeding locations with 480 cooks, 14 middle managers and 120

junior managers.

Gathering information/data for higher management levels, passage of information and

policy to individual locations.  Approve large work services, budget control of contracts

in access of £12m per annum.

 

1989-90          MIDDLE MANAGER

 

Writing the statement of requirements and co-ordination of £10.75m long term contracts,

the putting out to tender and letting of £0.75m short term contracts.

 

1985-89          AREA MANAGER

 

Controlled all aspects of provision, accounting from a bulk issue store and for feeding in

29 locations.  Supervision and control of £2m per annum contracts.  Administration of

80 staff.  Organised, planned and fed 15000 public on Open Days.

Facilities management.

 

1981-85          TRAVELLING INSTRUCTOR

 

Advisory Service in all aspects of catering in 60-80 locations.  Monitoring food

production and hygiene standards.  Instructor and coordinator of courses for cooks

and junior managers.

Planned and organised major feeding commitments e.g. Exercises in UK and

Germany, Military Displays and Celebrations.

 

1976-81          SITE MANAGER

 

Managed the catering operation for 4 locations ranging from hotel style facilities for 250

to cafeteria feeding for up to 2000, 3 meals per day.  Control and direction of

manpower, provisions and account in excess of £900000 per annum.

Planning and carrying out of Banquets, Formal Dinners including Royal Visits and VIPs.

Supervision of all aspects of food production, hygiene and food safety procedures.

Technical advice and staff training.
